As a vegan, going out for a meal with friends and family can be difficult. People tend to ask you to choose the place to go because they simply 'don't know what you can eat'. The thing is, wherever you choice, the options are usually limited, and the your decision is usually made for you for that simple fact. You see, as a vegan, you can eat ANYTHING, there is a substitute for all meat, a substitute for fish, its really not a limited diet - however, people see it as being too much effort to cater for so they limit the options, and by doing so, exclude a wide customer base. I have, however, began to see this slowly changing. More places have a good selection, or easily adaptable vegetarian options that can be made vegan with a few adjustments - bean burger with halloumi, guac served in a brioche bun? Ditch the Guac (this is usually made with cream for those who didn't know) and the bun, ask for salsa instead, and ta-da, vegan! Not only have places started opening up...

Carrot & Coconut Soup

Hi All, Hope you're all having a great 2019 so far. Slowly getting back into a routine. So for this post, I am going to share a recipe for Carrot and Coconut soup. It Sounds like it wouldn't work, but, believe me,  its INCREDIBLE! If you're interested, then keep reading. Ingredients : 5/6 Large Carrots (washed - no need to peel) 400g Can of Coconut Milk 1 Red Onion 1tbsp Smooth Peanut Butter 1tbsp Red Curry Paste  3 Cloves of Garlic Freshly ground Salt & Pepper (to taste) 1tbsp Coconut Oil Method : 1. On a medium heat, add to a heavy bottomed pan the coconut oil. whilst the oil is melting, dice the onion and roughly chop the washed carrots. Add the onion to the pan until softened, and crush the garlic into the onions. occasionally stirring so the onions don't burn. 2. Pour in the coconut milk, red curry paste, carrots and peanut butter. Bring the mixture to the boil, then turn the heat down low, cover and simmer for 25-30 or unt...
